This weeks recipe of the week is focused around a meal that warms our tummys (Brisbane has been so cold this week) but is also packed with nutrients and easy on your digestion-For those of you who are fasting, this is perfect!
This Soup is so easy to make and so packed full of flavour-It will be one the whole family will enjoy!
INGREDIENTS (All available at Amins’s Butcher)
· -1kg Chicken Breast (we prefer Bone-in)
· -1 Onion (Diced)
· -4 Garlic Cloves (Minced)
· -2 Carrots (Diced)
· -2 Celery Stalks (Chopped)
· -1 Leek (Thinly Sliced)
· -8 Cups Chicken Stock
· -1/2 Tsp Dried Thyme
· -1 Bay Leaf
· -2 Tsp Worcestershire Sauce
· -Salt and Pepper
· Fresh Parsley to serve
In slow cooker add all the soup ingredients, except for the additional salt/pepper to taste and parsley. Gently mix together all the ingredients to make everything combine well.
Place lid on and cook the soup on low for 7 hours or 4 hours on high.
Once cooked, shred the chicken with two forks and stir the soup to mix the chicken evenly throughout the soup.
Season to taste with salt, pepper and parsley.
SERVE WITH SOME FRESH BREAD!
And it is as easy as that! We are storing any leftovers in our freezer so we can have this meal anytime in the upcoming winter days :) YUM!
